9 Leftover Chicken Recipes

There is nothing quite so warming to the soul and body than a roasted chicken (unless you are a chicken of course).  The aroma of a roasting chicken is almost as delicious as the actual chicken and crispy skin…luckily no one else in my family loves the skin as I do, so it’s all mine! And while you may not get the aroma, those rotisserie chickens that Costco or many grocery stores sell truthfully can go head-to-head with a baked chicken on flavor.  I don’t know about you, but we rarely eat the entire chicken and so I’m always on the lookout for recipes for leftover chicken, whether rotisserie or baked.   

On a related note, while I’m not quite sure it is Hallmark Card status yet, I imagine it won’t be long until you can find cards proclaiming “Happy Rotisserie Chicken Day” around this time of year. Yup, today, June 2, is officially National Rotisserie Chicken Day. Not surprisingly, it was Boston Market who submitted the suggestion to the Registrar of National Day Calendar in 2015.

I was going to declare that I think we are starting to take this whole “National Day of…” thing too far except that I just realized that tomorrow (June 3) is actually National Chocolate Macaroon Day…so…nevermind.

Anywho, back to what to do with your leftover chicken…

I’ve rounded up a whole slew of good looking recipes that would easily use your leftover chicken or rotisserie chicken. And if you decide to add any of these gems to your Pinterest board, please make sure to pop over to the originating page…the link to each recipe is under the image.

My go-to uses for leftover chicken are adding it to my fried rice or using it in salads. Here are a couple of delicious sounding salad recipes that will easily accommodate your leftover or rotisserie chicken.

Chinese Chicken Salad With Napa Cabbage and Mandarin Oranges, Almonds and a Sweet Asian Dressing will always be a welcome meal at my table.

And along the same lines, this Asian Salad in a Jar would be perfect for your lunch or for an easy picnic option.

Do you love Chipotle’s salads as much as I do? If so, let’s dive in to this Chipotle Chicken Burrito Bowl Salad.

Allison suggests ways to lighten this Cranberry Walnut Chicken Salad by substituting greek yogurt in the dressing and by serving it on lettuce instead of bread. 

Chicken Lettuce Wraps are always a big hit in our home and I’ll surely add these Peanut Asian Chicken Lettuce Wraps to our rotation, though I probably need to wait until Kate is home or she might not forgive me.

These Greek Chicken Nachos are one of those brilliant food combos. Pita chips serve as the tortilla chips which are then covered by a deconstructed Greek Salad…I’m dying to give this a try.

Enchiladas are one of those meals that I don’t make too often, but when I do everyone is happy! Using leftover chicken makes it even easier.

I was tickled to come across this lovely combination! I have little grape tomatoes and basil growing in my garden, so tossing these Pesto Chicken Polenta Bowls with Burst Tomatoes together will be so easy!

So here’s the challenge…I have some leftover chicken sitting in my fridge and now I need to decide which of these tempting recipes will be the first one I make. What will you make first?

  1. Lynn I haven’t even had my breakfast yet and now I want lunch! These are all great recipes. Of course I am a bit partial to the ones with feta in them. And the first recipe “what a girl eats”.
